  • salt and pepper to taste - 1 item
  • green pepper, chopped - 1/2 item
  • small onion - 1 item
  • eggplant - 1 item
  • Post Toasties - 1 c

How to make eggplant casserole:

Peel and boil eggplant with the onion until tender. Drain and mash. Mix. Bake for 10 minutes. Sprinkle 1/2 cup cheese on top.
