Ingredients/Components

  • sugar - 1 Tbsp
  • eggs - 2 item
  • stick butter - 1/2 item
  • chopped onions - 1/2 c
  • can cream of mushroom soup - 1 item
  • ham - 1/2 1
  • eggplant, peeled and cubed - 1 item
  • American cheese/Velveeta - 1 c
  • cracker bread crumbs - 1 c

How to make eggplant casserole:

Cook eggplant until tender in salt and water and drain. Add soup, eggs, sugar, onions, cheese and 1/2 cup breadcrumbs. Mix well and put in baking dish. Mix butter and other crumbs and put on top. Bake 30 minutes at 350°.
