Eggplant casserole
Ingredients/Components
- sugar - 1 Tbsp
- eggs - 2 item
- stick butter - 1/2 item
- chopped onions - 1/2 c
- can cream of mushroom soup - 1 item
- ham - 1/2 1
- eggplant, peeled and cubed - 1 item
- American cheese/Velveeta - 1 c
- cracker bread crumbs - 1 c
How to make eggplant casserole:
Cook eggplant until tender in salt and water and drain. Add soup, eggs, sugar, onions, cheese and 1/2 cup breadcrumbs. Mix well and put in baking dish. Mix butter and other crumbs and put on top. Bake 30 minutes at 350°.Similar recipe submitted by Susan Lockwood.
