Spiced okra



  • water - 2 c
  • salt optional - 1/4 tsp
  • finely chopped onion - 1 Tbsp
  • white pepper - 1/4 tsp
  • cayenne pepper - 1/4 tsp
  • clove garlic, finely chopped - 1 item
  • fresh cut okra, washed, stemmed and each cut crosswise into 3 pieces - 1/4 lb

How to make spiced okra:

Combine water, onion, garlic, cayenne, white pepper and salt. Bring to a boil over high heat. Add okra and cook briskly, gently stirring occasionally, for about 15 minutes or until almost all of the liquid in the pan has evaporated and okra is tender, but intact. Take the okra out of pan and put into a colander. Run cold water over it to set the color and stop the cooking.

Place okra in small serving bowl and let it cool. Tightly covered, the okra can be kept at room temperature or in the refrigerator for 2 or 3 hours. Yields 4 servings.
