  • cream cheese - 8 oz
  • eggs - 4 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • chopped nuts - 1/2 c
  • flour - 2 c
  • coconut - 1 c
  • oil
  • soda - 2 tsp
  • stick butter - 1 item
  • carrots, grated - 3 c
  • Sift flour, salt, soda and cinnamon

How to make carrot cake:

Cream oil, sugar and eggs. Sift flour, salt, soda and cinnamon. Mix well; add carrots and nuts. Bake 40 minutes at 350°.Topping:1 lb. confectioners sugar2 tsp. vanilla8 oz. cream cheese1 c. coconut1 stick butter Cream butter, cream cheese, sugar, coconut and vanilla. Spread over cake after cake cools.
