Ingredients/Components

  • cream cheese - 1 (8
  • egg yolks - 2 item
  • egg - 1 item
  • whipping cream - 1/2 c
  • margarine - 1/4 c
  • pepper - 1/2 tsp
  • chopped onion - 1 item
  • Dijon mustard - 2 Tbsp
  • sliced zucchini - 3 c
  • garlic salt to taste - 1 item
  • dill - 1 tsp
  • Monterey Jack cheese - 2 c
  • red bell pepper, diced - 1/2 item
  • or 10-inch unbaked pie shell - 9 item

How to make creamy zucchini quiche:

Spread mustard on bottom of pie shell and bake at 450° for 10 minutes. Cool. Reduce oven to 350°.

Saute zucchini, onion and red pepper until tender. Sprinkle 1/2 of the cheese in bottom of pie shell. Spoon zucchini mixture on top of cheese. Beat together cream cheese, cream, eggs and seasonings. Pour over zucchini mixture and sprinkle with remaining cheese. Bake at 350° for 45 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before cutting. Serves 6.
