  • eggs, beaten - 2 item
  • margarine - 4 Tbsp
  • pepper - 1 tsp
  • Dijon mustard - 2 tsp
  • sliced zucchini - 4 c
  • oregano
  • basil - 1 tsp
  • parsley - 2 Tbsp
  • medium onion, chopped - 1 item
  • Mozzarella, shredded - 2 c
  • 8 count tube crescent rolls - 1 item

How to make zucchini pie:

Melt margarine in large skillet and saute zucchini and onion until tender. Remove from heat. Mix together eggs and cheese, then add spices. Line 10-inch pie plate with rolls to make crust and spread with mustard. Mix zucchini and onion with egg mixture; pour into pie plate. Bake 25 minutes at 350°. Serve warm.
