Creamy chicken hash



  • half and half - 3/4 c
  • butter or margarine - 2 Tbsp
  • salt - 1 tsp
  • all-purpose flour - 1 Tbsp
  • small onion, diced - 1 item
  • cubed cooked chicken or turkey - 2 c
  • cubed cooked potatoes - 2 c
  • chopped parsley garnish - 1 item

How to make creamy chicken hash:

In a 10-inch skillet over medium heat, in hot butter or margarine, cook onion until tender, about 5 minutes, stirring occasionally. Stir in flour and salt. Gradually stir in half and half; cook, stirring, until thickened. Stir potatoes and chicken into mixture. Reduce heat to low. Cover skillet and simmer about 10 minutes, or until mixture is heated through, stirring occasionally. Garnish with parsley. Serves 4.
