Golden potato surprise
Ingredients/Components
- half and half - 1 c
- butter or margarine - 2 Tbsp
- salt - 1 item
- water - 1 item
- all-purpose flour - 2 Tbsp
- mayonnaise - 1/2 c
- black pepper - 1/2 tsp
- slices bacon, cooked and crumbled - 4 item
- dried thyme leaves - 1 tsp
- Dijon style mustard - 1 Tbsp
- Sauce:2 red onions, chopped
- to 5 medium potatoes, peeled and diced - 4 item
How to make golden potato surprise:
Sauce:2 red onions, chopped2 Tbsp. butter or margarine2 Tbsp. all-purpose flour1/2 tsp. salt1/2 tsp. black pepper1 c. half and half1 Tbsp. Dijon style mustard1/2 c. mayonnaise4 slices bacon, cooked and crumbled1 tsp. dried thyme leaves Cover potatoes with boiling salted water in a saucepan. Bring to a boil. Cover and simmer for about 15 minutes. Drain. Set aside.Melt butter in a saucepan. Add onions. Saute over medium heat until soft but not brown. Sprinkle with flour. Add salt and pepper. Slowly add half and half, cooking and stirring constantly, until sauce thickens. Remove from heat. Cool slightly. Add mustard and mayonnaise. Stir until well blended. The sauce is thick and creamy. Turn potatoes into buttered 1 1/2-quart casserole. Cover with sauce. Bake at 350° for 30 minutes. Sprinkle with crumbled bacon and thyme leaves. Serve.
