Cream of broccoli soup
Ingredients/Components
- half and half - 1 c
- milk - 1 c
- flour - 4 Tbsp
- butter - 4 Tbsp
- whipping cream - 1 c
- chopped onion - 1/2 c
- chopped celery - 1/2 c
- chicken broth - 12 oz
- basil - 1/2 tsp
- white pepper - 1/8 tsp
- fresh chopped broccoli or 2 pkg - 1 lb
How to make cream of broccoli soup:
Combine broccoli, celery, onion and chicken broth. Heat to boiling; lower heat and simmer 10 minutes. In medium saucepan, melt butter. Add flour and mix. Then add 1/2 cup milk to make white sauce. Stir white sauce into broccoli mixture. Add rest of milk, half and half and cream. Add seasonings and mix well.
