Crab stuffed chicken breasts
Ingredients/Components
- milk - 3/4 c
- salt - 1/2 tsp
- flour - 1/4 c
- butter - 3 Tbsp
- water - 3/4 c
- paprika - 1/2 tsp
- chopped onion - 1/4 c
- dry white wine - 1/3 c
- dash of pepper - 1 item
- cooked shrimp
- shredded Swiss cheese
- can crab meat - 1 oz
- instant chicken bouillon - 1 tsp
- chicken breasts, skinned and boned - 6 item
- crushed saltine crackers - 1/2 c
- can chopped mushrooms - 1 oz
- fresh parsley or 1 Tbsp - 2 Tbsp
How to make crab stuffed chicken breasts:
Pound chicken breasts flat. Make Sauce: Melt 3 tablespoons of butter. Stir in flour and bouillon. Add milk, water and wine. Cook until thick. Set aside.Make Crab Filling: Cook onion in 1 tablespoon butter. Stir in crab, mushrooms, crackers, parsley, salt, pepper and 3 tablespoons of sauce.
Divide the crab filling among chicken breasts and roll up. Cover with remaining sauce. Cover and bake for 1 hour at 350°. Uncover. Top with Swiss cheese and paprika. Bake until cheese melts. Top with cooked shrimp (3 per serving).
