Crab puffs
Ingredients/Components
- milk - 1 c
- salt - 1/2 tsp
- flour - 2 Tbsp
- butter - 2 Tbsp
- whipping cream - 1 c
- paprika - 1/4 tsp
- egg yolks, beaten - 2 item
- egg whites, beaten - 2 item
- white crab meat - 1 lb
- dark pepper - 1 item
How to make crab puffs:
Melt butter; blend in flour and seasonings. Add milk gradually and cook until thick and smooth, stirring constantly. Stir a little of the sauce into the egg yolk. Add the remaining sauce, stirring constantly. Add paprika and crab meat. Whip the cream. Fold in egg white and whipped cream. Place in 6 well-greased individual 20 ounce casseroles. Place casseroles in a pan of hot water. Bake at 350° for 40 to 45 minutes or until puffs are firm in the center. Serves 6.Recipe categories: Appetizers, Shellfish, Crab.
