Cabbage slaw
Ingredients/Components
- sugar - 1 Tbsp
- milk
- salt - 1 tsp
- flour
- butter - 2 Tbsp
- vinegar - 1/2 c
- grated carrot - 1/2 c
- dry mustard - 1 tsp
- paprika - 1 Tbsp
- diced celery - 1/2 c
- shredded cabbage - 3 c
- egg yolks, beaten - 2 item
How to make cabbage slaw:
Dressing:3 Tbsp. flour1 tsp. salt1 tsp. dry mustard1 Tbsp. sugar1 Tbsp. paprika1 1/2 c. milk2 egg yolks, beaten1/2 c. vinegar2 Tbsp. butter Combine cabbage, carrot and celery in mixing bowl. Sprinkle with salt. Refrigerate 2 hours.In saucepan, combine flour, salt, mustard, sugar and paprika. Gradually add milk, stirring until smooth. Cook over low heat, stirring often until thickens and boils. Boil 1 minute.
In a small bowl, add a small amount of hot mixture to beaten egg yolks combined with vinegar. Pour into hot mixture and blend. Add butter. Stir until melted. Bring to a boil. Cool. Pour over cabbage mixture. Toss until well coated.
