- buttermilk - 1 c
- skimmed milk, pasteurized or raw farm milk - 3 qt
How to make cottage cheese:
Heat milk until lukewarm (90° to 100°). Set in a warm place and stir in buttermilk. Let stand until curds form, probably one to two days.Put milk in a saucepan and set in container of warm water. Heat until lukewarm (approximately 100°), stirring occasionally. Meanwhile, line deep strainer with cheesecloth. Pour off whey. Let drain until cheese is set.
Note: Be very careful not to get too hot or it will be a rubbery mass. Cheese may be mixed with cream, salt, herbs or served as is. Yields 1 pound.
