How to make cottage cheese:
Heat sour milk to a temperature of about 98° and let stand until it is uniformly warm throughout and the curd separates from the whey. Drain the whey off; add melted butter or cream, salt and pepper and serve while fresh. It may be flavored with pimentos, chopped olives or chopped nuts.
