Corn relish
Ingredients/Components
- sugar - 2 c
- salt - 2 Tbsp
- water - 1 pt
- cider vinegar - 1 qt
- stalks celery - 2 item
- medium onions - 2 item
- mustard seed - 1 Tbsp
- ground mustard - 1 Tbsp
- ears corn - 12 item
- small hot peppers optional - 2 item
- large red sweet peppers - 5 item
- large green sweet peppers - 5 item
How to make corn relish:
Cut corn from cob but do not scrape. Frozen or canned whole kernel corn may be used. Remove seeds from peppers and chop fine. Chop celery and onions. Combine with seasonings, vinegar, water and sugar; cook 15 minutes. Reduce heat to slow simmer; cook 30 minutes more. Seal at once in sterilized jars.Recipe categories: < 60 mins, Vegetables, Corn.
