Corn relish
Ingredients/Components
- salt - 2 Tbsp
- brown sugar - 2 c
- vinegar - 1 qt
- chopped celery - 1 c
- mustard - 3 Tbsp
- medium onions - 4 item
- large green peppers - 2 item
- sweet red peppers - 2 item
- small cabbage head - 1 item
- ears sweet corn - 18 item
How to make corn relish:
Cut corn from cob. Seed peppers and chop with cabbage and onion. Mix vegetables together. Add remaining ingredients and cook until corn is tender, 20 to 30 minutes, stirring occasionally. Pour in hot sterilized jars and seal. Makes 5 pints.Recipe categories: < 60 mins, Vegetables, Corn.
