Ingredients/Components

  • pkg - 1 oz
  • margarine - 1/2 c
  • dash of pepper - 1 item
  • shredded Cheddar cheese - 1 c
  • can cream of mushroom soup - 1 item
  • soup can milk - 1 item
  • onion, chopped - 1/2 c
  • chopped pimento - 2 Tbsp
  • small green pepper, cut into strips - 1 item
  • cheese cracker crumbs, divided - 1 c

How to make confetti scalloped potatoes:

In skillet, saute onion in margarine over medium heat. Stir in potatoes, soup and milk. Add cheese, green pepper strips, pimento, pepper and 1/2 cup cheese cracker crumbs. Pour into shallow casserole dish. Top with remaining crumbs. Bake at 375°
