- vanilla instant pudding - 1 pkg
- water
- oil - 1/4 c
- eggs - 4 item
- margarine
- coconut - 2 c
- milk - 2 Tbsp
- cream cheese - 1 (8
- powdered sugar
- vanilla - 1 tsp
How to make coconut cake:
Frosting:2 Tbsp. margarine2 c. coconut2 Tbsp. milk1 (8 oz.) cream cheese2 Tbsp. milk3 1/2 c. powdered sugar1 tsp. vanilla Blend in large bowl, beat on medium speed for 4 minutes. Add 2 cups of coconut, 1 cup of nuts. Bake at 350° for 35 to 40 minutes.Frosting: Melt margarine in large pan, add coconut, stir constantly on low heat until golden brown. Put on paper towels to cool. Cream together frosting ingredients. Frost cake, then sprinkle brown coconut on top.
