Chocolate zucchini cake
Ingredients/Components
- sugar - 2 c
- eggs - 3 item
- vanilla - 2 tsp
- milk - 1/2 c
- chopped nuts - 1 c
- cocoa - 1/2 c
- baking powder
- baking soda
- chocolate chips - 1 c
- all-purpose flour
- softened butter - 3/4 c
- grated orange peel - 2 tsp
- coarsely shredded zucchini - 2 c
- each salt and cinnamon - 1 tsp
How to make chocolate zucchini cake:
Combine the flour, cocoa, baking powder, baking soda, salt and cinnamon. Set aside. With a rotary mixer, beat together the butter and sugar until they are smoothly blended. Add the eggs, one at a time, beating well after each addition. With a spoon, stir in the vanilla, orange peel and zucchini. Alternately, stir the dry ingredients and the milk into zucchini mixture, including the nuts with the last addition. Pour batter into a greased 9 x 13-inch pan. Bake at 350° for 50 to 60 minutes or until tests done. Remove from oven and immediately sprinkle with chocolate chips.
