Ingredients/Components

  • sugar
  • eggs - 2 item
  • vanilla - 1 tsp
  • salt - 1/2 tsp
  • flour
  • oil - 1/2 c
  • cocoa - 4 Tbsp
  • baking soda - 1 tsp
  • pinch of salt - 1 item
  • grated zucchini
  • margarine - 1/2 c
  • sour milk * - 1/2 c
  • buttermilk * - 1/3 c
  • powdered sugar 3 1/2 c - 1 lb
  • Allow souring milk to rest a few minutes

How to make chocolate zucchini bars:

*To make sour milk or buttermilk, add 1/2 tablespoon vinegar or lemon juice to milk to equal 1/2 cup. Allow souring milk to rest a few minutes.

Cream margarine, sugar, oil, eggs and vanilla. Beat well. Mix flour, salt, cocoa and soda together. Add dry ingredients to first mixture alternately with sour milk. Fold in zucchini. Bake in a 9 x 13-inch pan or 9 x 15-inch pan at 325° for 35 minutes or until done. Frost with your favorite frosting or Easy Chocolate Frosting.Easy Chocolate Frosting:1/2 c. butter or margarine1/4 c. cocoa1/3 c. buttermilk *1 lb. powdered sugar (3 1/2 c.)1/2 tsp. vanilla pinch of salt Put butter, cocoa and buttermilk in saucepan. Bring up to boiling point, but do not boil. Remove from heat and add powdered sugar and vanilla. Mix well. Frost cake while warm.
