Chinese chicken salad
Ingredients/Components
- dry thin spaghetti, broken into thirds - 8 oz
- water - 1/3 c
- peanut butter - 3 Tbsp
- soy sauce - 2 tsp
- crushed red pepper - 1/8 tsp
- snow peas, cut diagonally in 1-inch pieces - 1 c
- each cans chunk white chicken, drained - 2 oz
- sweet red pepper strips - 1/2 c
- sliced green onions - 1/3 c
- shredded spinach leaves - 3 c
How to make chinese chicken salad:
Cook spaghetti according to package directions. Meanwhile, in 1-quart saucepan, combine water, peanut butter, soy sauce and crushed red pepper. Over medium heat, heat to boiling, stirring constantly. Add snow peas; cook 1 minute or until sauce is smooth and snow peas are tender-crisp, stirring constantly.In large bowl, combine hot spaghetti, chicken, red pepper strips and green onions. Pour sauce mixture over spaghetti mixture; toss to coat. On 6 plates, arrange spinach. Top with spaghetti mixture.
