Marinated vegetables
Ingredients/Components
- broccoli flowerets
- cucumber, sliced
- halved Brussels sprouts
- green pepper, sliced thinly - 1 item
- small red onion, thinly sliced and separated into rings - 1 item
- 1/2 large bottles Italian dressing - 1 item
- cauliflower flowerets, cut up
- baby carrots sticks
- cherry tomatoes, halves
How to make marinated vegetables:
In a saucepan, cook the Brussels sprouts, cauliflower, broccoli and carrots in a small amount of liquid, salted boiling water, until tender-crisp; drain.In a deep bowl, layer 1/2 cooked vegetables, sliced cucumber, onions, cherry tomatoes and pepper slices. Pour 1/2 of dressing over layer. Repeat second layer as first. Pour remaining dressing over vegetables. Cover, chill several hours or overnight. Serve with slotted spoon.
