How to make chicken with mushrooms:

In large skillet over medium high heat, heat oil until hot. Add chicken quarters and cook, turning once until golden brown on both sides. Remove chicken; drain grease. Return chicken to skillet. Add mushrooms; cover and cook. Stir until mushrooms begin to soften. Add wine. Cook until liquid is reduced by one half. Stir in butter, salt and pepper. Cover. Continue cooking about 20 minutes until sauce thickens.
