Chicken taco rice
Ingredients/Components
- oil - 2 Tbsp
- can chicken broth - 1 item
- 2 oz - 1/2 c
- can corn, drained - 1 oz
- Minute rice
- tortilla chips - 1 item
- can tomatoes - 1 oz
- taco seasoning - 1 pkg
- sour cream optional - 1 item
- boned chicken breast, cut into strips - 1 lb
- medium red or green pepper, cut into small strips - 1 item
How to make chicken taco rice:
Cook and stir chicken in hot oil until lightly browned. Add broth, tomato sauce and seasoning mix. Bring to a boil; reduce heat. Cover and simmer 5 minutes. Add corn and pepper. Bring to a full boil; stir in rice. Cover; remove from heat. Let stand 5 minutes. Fluff with fork. Serve with cheese, tortilla chips and sour cream, if desired.
