Chicken taco and rice
Ingredients/Components
- oil - 2 Tbsp
- can chicken broth - 1 3/4
- can tomato sauce - 1 oz
- can corn, drained - 1 oz
- taco seasoning mix - 1 pkg
- dry Minute rice
- skinned, boned chicken breasts, cut into strips - 1 lb
- medium green or red pepper or combination, cut into strips - 1 item
How to make chicken taco and rice:
Saute chicken in oil until opaque. Add chicken broth, tomato sauce and taco seasoning mix. Bring to a boil, then simmer, covered, 5 minutes, stirring occasionally. Add corn and peppers; bring to a full boil. Stir in rice. Cover and remove from heat; let stand 5 minutes. Fluff with fork. Serve with shredded cheese, if desired.
