Chicken salad in pineapple boats
Ingredients/Components
- slivered almonds, toasted - 1/2 c
- mayonnaise - 1 item
- scallions, sliced - 1/2 c
- cooked chicken, chopped - 3 c
- red grapes, cut in half - 1 c
- small fresh pineapples - 4 item
How to make chicken salad in pineapple boats:
Wash pineapples; trim any bad leaves around edge and cut in half. Hollow out, leaving at least a half inch of the pineapple meat. Mix chicken, scallions, almonds, pineapple meat and grapes. Add mayonnaise (just enough to hold the ingredients together). Fill pineapple shells. To serve, line platter with red lettuce leaves and lay pineapple with leaves out.
