Chicken pie with sweet potato crust
Ingredients/Components
- salt - 1/2 tsp
- flour - 2 Tbsp
- butter - 2 Tbsp
- baking powder - 1 tsp
- melted butter - 1/4 c
- beaten egg - 1 item
- grated orange peel - 1 Tbsp
- chicken broth - 2 c
- salt and pepper - 1 item
- chopped parsley - 1/3 c
- diced cooked chicken - 2 c
- grated lemon peel - 1 tsp
- green peppers, thinly sliced - 2 item
- orange juice and 2 Tbsp - 1 Tbsp
- 2 can small onions, drained save juice
- Sprinkle with parsley
How to make chicken pie with sweet potato crust:
Put a layer of chicken in 2-quart baking dish, a layer of green pepper and then a layer of onions. Sprinkle with parsley. Repeat until all vegetables are used.Make a thin sauce by melting butter over moderate heat, blending in flour and adding chicken broth slowly, stirring until thickened and smooth. Add lemon peel and a little salt and pepper. Mix.
Pour over chicken in baking dish. Then top with Sweet Potato Crust and bake in moderate oven at 350° for about 40 minutes.Sweet Potato Crust:1 c. mashed cooked sweet potatoes1/4 c. melted butter1 beaten egg1 Tbsp. grated orange peel1 Tbsp. orange juice and 2 Tbsp. undiluted concentrated juice1 c. flour1 tsp. baking powder1/2 tsp. salt Mix sweet potatoes with butter, egg, orange juice, peel and concentrate. Sift flour with baking powder; combine with potato mixture, beating until smooth.
Roll out on floured board to about 1/4-inch thickness and shape to fit top of casserole. Place on top and crimp as for pie crust.
