Chicken parmesan
Ingredients/Components
- eggs - 2 item
- grated Pecorino Romano cheese - 2 tbsp
- chopped parsley - 2 Tbsp
- salt and freshly ground pepper - 1 item
- vegetable oil - 2 Tbsp
- whole boneless, skinless chicken breast, split and pounded to a 1/4-inch thickness - 1 item
- all-purpose flour, for dredging, on a flat plate - 1/2 c
- breadcrumbs, on a flat plate - 1/2 c
- tomato sauce - 1 c
- grated Parmesan cheese - 2 Tbsp
- slices Mozzarella cheese, thinly sliced - 2 item
How to make chicken parmesan:
Preheat the oven to 375°. In a bowl, combine the eggs, Pecorino Romano cheese, parsley and salt and pepper to taste. In a medium skillet, heat the oil over medium-high heat. Dredge both sides of each chicken breast into the flour, making sure to remove any extra flour, then into the egg mixture and then into the breadcrumbs. Saute the chicken in the hot oil for approximately 4 minutes on each side or until golden brown and fully cooked. Place the tomato sauce in a shallow baking dish and arrange the chicken on the sauce. Spoon the remaining sauce over the chicken. Sprinkle one tablespoon of Parmesan cheese over each piece of chicken.
