Chicken marsala
Ingredients/Components
- butter or margarine - 4 Tbsp
- flour - 3 Tbsp
- vegetable oil - 1 Tbsp
- chopped onions - 1/2 c
- salt to taste - 1 item
- sliced mushrooms - 1/2 lb
- cloves garlic, chopped - 2 item
- ground pepper - 1/2 tsp
- beef stock - 2/3 c
- dry marsala - 3 Tbsp
- skinless boneless chicken breasts, pounded to 1/4-inch - 4 item
How to make chicken marsala:
Mix flour and pepper in dish. Dredge chicken in flour mixture to coat. Shake off excess.Heat 2 tablespoons of butter in oil over medium heat. Add chicken and cook until lightly browned. Remove and keep warm. Add onion and garlic in same pan and saute until onion is tender. Add mushrooms and cook until lightly browned. Return chicken to pan, stir in marsala and beef stock. Bring to boil, reduce heat and simmer until liquid reduces by 1/3. Whisk in remaining butter. Season with salt and add more pepper to taste. Serve with parsleyed noodles.
