Chicken enchiladas
Ingredients/Components
- sour cream
- cans cream of chicken soup - 2 oz
- bunch green onions, chopped - 1/2 item
- Monterey Jack cheese
- can diced Ortega chilies - 1 oz
- medium Cheddar cheese
- 9-inch flour tortillas - 12 item
- chicken breast halves, cooked and peeled off bone and chopped into bite size pieces - 6 item
How to make chicken enchiladas:
Sauce:1 pt. sour cream2 (10 oz.) cans cream of chicken soup1 (8 oz.) can diced Ortega chilies Sauce: Mix ingredients together with hand mixer. Put sauce in bottom of two greased 9 x 13-inch pans.Place chopped chicken, onion and small amount of grated cheese in tortilla shells. Roll in sauce in the pan. Cover with grated cheese. Bake at 350° for 30 minutes, or until bubbly.
