Ingredients/Components

  • Egg Beaters - 3 item
  • skim milk - 1 c
  • flour - 2/3 c
  • Add flour and beat well
  • chopped onions - 1/4 c
  • can stems and pieces mushrooms, drained - 1 oz
  • cooked and drained spinach - 1/2 c
  • chicken breast, cooked and skinless - 1 item
  • low-fat Ricotta cheese - 1/2 c
  • nonfat cottage cheese - 1/2 c
  • salt to taste optional - 1 item
  • pepper to taste - 1 item
  • lemon juice - 2 tsp
  • Add the mushrooms, chopped chicken and spinach
  • chicken broth - 1 c
  • minced garlic - 1/4 tsp
  • onion powder - 1/4 tsp
  • basil - 1/4 tsp
  • tomato sauce - 3 c
  • oregano - 1/4 tsp
  • grated nonfat Alpine Lace Mozzarella cheese - 1 c

How to make chicken crepes:

Beat Egg Beaters and milk together. Add flour and beat well. Let the batter stand, but beat again before cooking. Heat a crepe pan or a small nonstick pan until hot. Pour about 2 tablespoons of the batter into the pan. Tilt the pan to coat the whole bottom. Cook about 1 minute or until the underside is lightly brown. Turn the crepe and brown the other side for about 10 to 20 seconds. Remove and cool before filling. This should make about 15 crepes.Filling:1 tsp. liquid Butter Buds1/4 c. chopped onions1 (8 oz.) can stems and pieces mushrooms, drained1/2 c. cooked and drained spinach1 chicken breast, cooked and skinless1/2 c. low-fat Ricotta cheese1/2 c. nonfat cottage cheese salt to taste (optional) pepper to taste2 tsp. lemon juice Saute onion in the Butter Buds. Add the mushrooms, chopped chicken and spinach. Add the cheeses and seasonings. Spoon about 2 tablespoons into each crepe. Tuck the ends in to prevent seepage and roll up the crepes. Set aside.Sauce Topping:1 Tbsp. cornstarch1 c. chicken broth1/4 tsp. minced garlic1/4 tsp. onion powder1 c. skim milk1/4 tsp. basil3 c. tomato sauce1/4 tsp. oregano1 c. grated nonfat Alpine Lace Mozzarella cheese Blend until smooth the milk, cornstarch and salt to taste. Boil until thick and set aside. Mix together tomato sauce and chicken broth. Simmer about 45 minutes. Stir together the two sauces. Spread the sauce over the crepes in a 9 x 13-inch baking dish that has been sprayed with a nonfat cooking spray. Top with grated cheese. Bak
