Ingredients/Components

  • brown sugar - 2 Tbsp
  • white wine vinegar - 3 Tbsp
  • minced onion - 1/4 c
  • dry sherry - 3 Tbsp
  • crushed red pepper - 1/2 tsp
  • vegetable cooking spray - 1 item
  • coarsely ground black pepper - 1/2 tsp
  • low-sodium soy sauce - 3 Tbsp
  • boned, skinned chicken breasts - 1 lb
  • small red bell peppers, each cut into 16 1-inch pieces - 2 item
  • sesame seed, divided - 2 tsp

How to make spicy chicken skewers:

Coat a small skillet with vegetable cooking spray. Place over medium heat until hot. Add minced onion and crushed red pepper. Saute 3 minutes or until tender. Remove from heat. Stir in brown sugar, black pepper, white wine vinegar, soy sauce and sherry. Set aside.

Place each piece of chicken between 2 sheets of heavy-duty plastic wrap. Flatten to about 1/4-inch thickness using a meat mallet or rolling pin. Cut chicken into 64 (1-inch) pieces. Place in a bowl. Add onion mixture and toss well. Cover and marinate in refrigerator 3 hours, stirring occasionally.

Drain chicken, reserving marinade. Thread 4 chicken pieces and 2 bell pepper pieces onto each of 16 (8-inch) wooden skewers. Place 8 skewers on a rack of a broiler pan coated with cooking spray. Place rack on a broiler pan. Brush with reserved marinade and sprinkle evenly with 1/2 teaspoon sesame seed. Broil 3 to 4-inches from heat 2 minutes. Turn skewers, brush with marinade and sprinkle evenly with 1/2 teaspoon sesame seed. Broil an additional 2 minutes or until chicken is done. Repeat procedure with remaining ingredients. Serve warm. Yields 16 appetizers (about 50 calories per skewer).
