Ingredients/Components

  • sugar - 3 Tbsp
  • chopped celery - 1 c
  • chicken broth - 6 c
  • bay leaf - 1 item
  • oregano - 1/2 tsp
  • basil - 1/2 tsp
  • parsley - 1 tsp
  • minced garlic - 1 tsp
  • Italian sausage
  • crushed tomatoes - 2 c
  • tomato puree - 1 c
  • thyme - 1/2 tsp
  • chopped red onion
  • or 20 pasta optional - 1 c

How to make italian sausage soup:

Saute sausage until no longer pink. Drain and slice into 1 inch pieces. Reserve 3 tablespoons of drippings. Saute celery, onions and garlic in drippings. Add olive oil if needed. Saute until transparent, but not brown; add tomatoes and tomato puree and sausage. Cook over medium heat for 5 minutes, stirring occasionally. Add broth, herbs and sugar and combine well. Simmer over low heat for 30 minutes. Add pasta, if desired. Continue cooking until pasta is done. This soup is better the second day. Sweet or hot Italian sausage may be used.
