Ingredients/Components

  • vegetable cooking spray - 1 item
  • thinly sliced onion - 1 c
  • chopped celery with leaves - 1 c
  • diced green pepper - 1 c
  • cloves garlic, minced - 3 item
  • sliced fresh mushrooms - 2 c
  • diced uncooked chicken - 2 c
  • can of no-salt added tomatoes - 1 1/2
  • Chablis or other dry white wine - 1/2 c
  • crushed red pepper flakes - 1/4 1/2
  • pepper - 1/4 tsp
  • bay leaf - 1 item
  • hot cooked rice, cooked without salt or fat - 2 c
  • chopped parsley - 2 Tbsp

How to make chicken creole:

Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add onion and next 3 ingredients. Saute until crisp-tender. Add mushrooms and cook about 3 minutes, stirring occasionally. Add chicken and next 5 ingredients; cook 25 minutes. Serve over rice; sprinkle with parsley.
