Ingredients/Components
- vegetable cooking spray - 1 item
- thinly sliced onion - 1 c
- chopped celery with leaves - 1 c
- diced green pepper - 1 c
- cloves garlic, minced - 3 item
- sliced fresh mushrooms - 2 c
- diced uncooked chicken - 2 c
- can of no-salt added tomatoes - 1 1/2
- Chablis or other dry white wine - 1/2 c
- crushed red pepper flakes - 1/4 1/2
- pepper - 1/4 tsp
- bay leaf - 1 item
- hot cooked rice, cooked without salt or fat - 2 c
- chopped parsley - 2 Tbsp
How to make chicken creole:
Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add onion and next 3 ingredients. Saute until crisp-tender. Add mushrooms and cook about 3 minutes, stirring occasionally. Add chicken and next 5 ingredients; cook 25 minutes.
