Ingredients/Components

  • eggs - 4 item
  • salt - 1/2 tsp
  • water - 2 Tbsp
  • all-purpose flour - 6 Tbsp
  • white pepper - 1/4 tsp
  • fresh lemon juice - 2 Tbsp
  • fresh bread crumbs - 1/2 c
  • unsalted butter, melted - 2 Tbsp
  • peanut oil for frying - 1 item
  • whole chicken breasts, skinned - 3 item
  • cooked smoked ham 6 slices - 3 oz
  • Swiss cheese 6 slices - 3 oz

How to make chicken cordon bleu:

Place whole breast on cutting board, rib side down. Cut in half. With a boning knife, trim the meat away from the breast bone, following contour of rib cage and pulling meat away as you cut. Repeat with the remaining breasts.

Remove tendon. Place breast, skinned-side down. Cut pocket. Slice horizontally lengthwise from thicker side, starting 1 inch from wing area, cutting 3/4 through.

Flatten breast to 1/4 inch thickness. Place ham in 6 equal stacks. Wrap each stack with cheese slice. Place in breast pocket; wrap meat around. Refrigerate 30 minutes. Combine flour, salt and pepper. Beat egg and water in plate. Coat breasts with flour, dip in egg and coat with crumbs. Refrigerate.

Cook chicken in a single layer in 1/4 inch of hot oil in a large skillet for 10 minutes until golden brown, turning once. Transfer to a baking dish. Bake in a 325° oven for 30 minutes.

Melt butter over low heat; stir in lemon juice. To serve, transfer chicken breasts to serving platter and spoon butter mixture over them. Makes 6 servings.
