How to make honey oatmeal bread:
In large mixer bowl, combine 1 cup oats, butter, boiling water, honey and salt. Cool to warm (105° to 115°). Stir in yeast. Add 2 eggs and 2 1/2 cups flour. Beat at medium speed, scraping bowl often, until smooth (1 to 2 minutes). Stir in enough remaining flour to make dough easy to handle. Turn dough onto lightly floured surface; knead until smooth and elastic (about 10 minutes). (Add more flour as needed until dough no longer sticks.) Place in greased bowl; turn greased side up.Cover; let rise in warm place until double in size (about 1 hour). Dough is ready if indentation remains when touched. Punch down dough; divide into thirds. Shape each third into loaf. Place loaves in 3 greased 8 x 4-inch loaf pans. Cover; let rise until double in size (about 1 hour). In small bowl, combine egg and water; gently brush over top of loaves. Sprinkle each loaf with 1 tablespoon oats. Heat oven to 350°. Bake for 25 to 35 minutes or until loaf sounds hollow when tapped. Do not overbake. Remove from pans immediately. Yields 3 loaves.
