Ingredients/Components

  • sour cream - 1/2 c
  • garlic salt - 1 item
  • green onions, sliced - 1/2 c
  • bay leaf - 1 item
  • margarine, melted - 2 Tbsp
  • mayonnaise - 3/4 c
  • Parmesan cheese, grated - 1 c
  • sherry - 1/2 c
  • fresh mushrooms, sliced - 1/2 lb
  • large whole chicken breasts, halved - 2 item
  • salt and seasoned pepper - 1 item
  • can artichoke hearts, drained and quartered may be cut smaller - 1 oz

How to make chicken artichoke casserole:

Cook chicken until tender with bay leaf, salt and pepper. Remove meat from bones and cut in bite size pieces. Saute mushrooms and green onions in margarine and garlic salt. Place chicken and artichokes in casserole and add mushrooms and onions. Fold in mayonnaise, sour cream, sherry and 1/2 cup of Parmesan cheese. Mix well; top with remaining cheese. Bake at 350°, uncovered, for 20 minutes or until cheese browns.
