Chicken artichoke casserole
Ingredients/Components
- salt
- flour - 2 Tbsp
- butter or oleo - 6 Tbsp
- paprika - 1/2 tsp
- pepper - 1/4 tsp
- sherry - 3 Tbsp
- chicken consomme or bouillon - 2/3 c
- jar artichoke hearts, drained - 1 to
- fryer chicken or equivalent, cut up - 1 (3
- mushrooms, cut into large pieces - 1/4 lb
How to make chicken artichoke casserole:
Salt, pepper and paprika chicken; brown in 4 tablespoons of the butter. Arrange chicken in large casserole. Saute mushrooms in remaining 2 tablespoons of butter for 5 minutes. Sprinkle flour over the mushrooms and stir in the consomme and sherry; cook for 5 minutes. Arrange artichokes in between the chicken pieces in the bottom of the casserole. Pour the sauce over all and cover and bake for 40 minutes in a 375° oven.Can be prepared in the morning or the day before, except for the final baking time. Have casserole at room temperature before baking. Serves 4 to 6.
