Chicken and sausage jambalaya
Ingredients/Components
- pkg - 10 oz
- oil - 1 tsp
- cloves garlic, minced - 2 item
- chicken broth - 1/2 c
- onion, chopped - 1 item
- black pepper - 1 tsp
- dried oregano - 1 tsp
- rice - 1 c
- cayenne pepper - 1/2 tsp
- dried thyme - 1/2 tsp
- rib celery, chopped - 1 item
- cans plum tomatoes - 2 oz
- hot Italian sausage, sliced - 1/2 lb
- chicken breasts, boned, skinned and cubed - 1 lb
How to make chicken and sausage jambalaya:
Heat oil in large frying pan over medium heat. Add sausage and cook 5 minutes. Add chicken, sear on both sides and remove mixture to plate. Add onion and celery to pan and cook 5 minutes. Add garlic and cook 1 minute. Drain tomatoes, reserving liquid and add to pan. Break up tomatoes with fork. Stir in rice, oregano, pepper, thyme and cayenne. Measure reserved tomato juice and add enough broth to equal 2 cups. Add liquid, chicken and sausage mixture. Add 2nd can of tomatoes. Bring to boil, lower heat, cover and simmer 10 minutes. Add okra.
