Chicken and rice
Ingredients/Components
- cornstarch - 1/4 c
- cooking oil - 3 Tbsp
- chopped onion - 3/4 c
- soy sauce - 3 Tbsp
- chicken broth - 2 c
- Minute rice - 3 c
- shredded, cooked chicken - 2 c
- small can mushrooms - 1 item
- green pepper
- can tomatoes, cut in wedges - 1 item
How to make chicken and rice:
Cook chicken breasts; bring to a boil. Remove chicken from bone. Prepare the rice. Cook green pepper and onion in oil in a skillet over low heat until tender, but not brown. Blend cornstarch with small amount of chicken broth. Add remaining broth and soy sauce and gently stir chicken and vegetables in together. Stir until sauce is clear and thickened.
