Chicken and dumplings
Ingredients/Components
- salt - 1/2 tsp
- water
- pepper - 1/4 tsp
- frozen peas - 10 oz
- bay leaf - 1 item
- onion, chopped - 1 item
- carrots, sliced - 2 item
- leaf thyme, crumbled
- cans reduced sodium chicken broth - 2 1/2
- yolkless noodles - 6 oz
- cubed, skinless boned chicken breasts - 2 c
- box reduced fat Bisquick mix - 1 item
How to make chicken and dumplings:
Combine chicken broth, water, bay leaf, thyme, salt and pepper in Dutch oven. Bring to boiling. Stir in onion, carrots, peas, noodles and cooked chicken cubes. Bring to simmer.Meanwhile, prepare dumplings (follow directions on Bisquick box). Drop by heaping tablespoonfuls onto simmering liquid. Cover and cook 10 minutes, until dumplings are light and fluffy. Remove bay leaf.
