Ingredients/Components

  • sour cream - 1 c
  • cooked chicken - 1 c
  • cans cream of chicken soup - 2 item
  • corn tortillas - 12 item
  • shredded cheese - 1/2 c
  • small can sliced black olives - 1 item
  • can diced green chilies - 1 item

How to make chicken and cheese enchiladas:

Mix all ingredients except tortillas in a pan; heat. In a small skillet heat peanut oil. Dip the corn tortillas in the oil to soften. Put 2 tablespoons of the sauce in each tortilla. Roll up and put in a casserole. Top with the remaining sauce and 1/2 cup of shredded cheese. Bake at 350° for 30 minutes.
