Italian zucchini pie
Ingredients/Components
- salt - 1/2 tsp
- butter - 1/2 c
- eggs, well beaten - 2 item
- garlic powder - 1/4 tsp
- pepper - 1/2 tsp
- chopped onion - 1 c
- Dijon mustard - 2 tsp
- parsley flakes - 2 Tbsp
- oregano - 1/4 tsp
- basil - 1/4 tsp
- shredded Mozzarella cheese - 8 oz
- can crescent rolls - 1 oz
- sliced, unpeeled zucchini - 4 c
How to make italian zucchini pie:
In large skillet, saute zucchini and onion in butter until tender, about 10 minutes. Stir in seasonings.In large bowl blend eggs and cheese. Stir in vegetables with eggs. Separate rolls into 8 triangles and place in ungreased 10-inch pie pan sealing edges to make crust. Spread mustard on crust. Pour in filling. Bake at 375° for 18 to 20 minutes until knife inserted comes out clean. Let stand 10 to 15 minutes before cutting and serving.
