Ingredients/Components

  • salt - 1/2 tsp
  • butter - 1/2 c
  • eggs, well beaten - 2 item
  • garlic powder - 1/4 tsp
  • pepper - 1/2 tsp
  • chopped onion - 1 c
  • Dijon mustard - 2 tsp
  • parsley flakes - 2 Tbsp
  • oregano - 1/4 tsp
  • basil - 1/4 tsp
  • shredded Mozzarella cheese - 8 oz
  • can crescent rolls - 1 oz
  • sliced, unpeeled zucchini - 4 c

How to make italian zucchini pie:

In large skillet, saute zucchini and onion in butter until tender, about 10 minutes. Stir in seasonings.

In large bowl blend eggs and cheese. Stir in vegetables with eggs. Separate rolls into 8 triangles and place in ungreased 10-inch pie pan sealing edges to make crust. Spread mustard on crust. Pour in filling. Bake at 375° for 18 to 20 minutes until knife inserted comes out clean. Let stand 10 to 15 minutes before cutting and serving.
