Cheesy chicken enchiladas
Ingredients/Components
- chopped, cooked chicken - 3 c
- jar chunky salsa - 1 oz
- cubed Velveeta cheese 8 oz - 2 c
- to 6 8-inch flour tortillas - 4 item
How to make cheesy chicken enchiladas:
In a medium saucepan combine salsa and cheese. Cook, stirring occasionally, over medium heat until cheese melts. Set aside 1 1/4 cups sauce. Stir chicken into remaining sauce. Spoon some of the chicken mixture down the center of each tortilla. Place filled tortillas, seam side down, in a greased baking dish. Cover with foil. Bake at 375° for 15 to 20 minutes or until heated through.To serve, reheat reserved sauce and pour over enchiladas. Top with sour cream, shredded lettuce and black olives.
