Scalloped chicken
Ingredients/Components
- milk - 2 c
- salt - 1 tsp
- flour - 3 Tbsp
- butter - 3 Tbsp
- melted butter - 2 Tbsp
- pepper - 1/8 tsp
- chopped onion - 1 Tbsp
- shredded Cheddar cheese - 2 c
- chicken bouillon cubes - 2 item
- chopped pimento - 2 Tbsp
- marjoram - 1/4 tsp
- chopped, cooked chicken - 2 c
- slices white bread - 3 item
- regular rice - 1 c
How to make scalloped chicken:
Cook rice according to package directions, dissolving bouillon cubes in boiling water before adding rice.In a saucepan, melt butter; saute onion. Stir in flour, salt, pepper and marjoram. Remove from heat and gradually stir in milk. Return to heat and cook, stirring constantly, until mixture thickens. Cook an additional 2 minutes. Add 1 1/2 cups cheese and pimento. Stir until cheese melts. Add chicken and rice.
Turn into a buttered 2-quart baking dish. Sprinkle with 1/2 cup of cheese. Trim crust from bread; cut into cubes. Toss with melted butter. Arrange around the edge of the casserole. Bake at 375° for 20 minutes.
