  • egg, beaten - 1 item
  • grated Parmesan cheese - 1/2 c
  • olive oil - 2 Tbsp
  • seasoned bread crumbs - 1/2 c
  • grated Jack or Cheddar cheese - 2 c
  • to 6 medium chicken breasts, skinned and boned - 4 item

How to make cheesy chicken breasts:

Combine bread crumbs and Parmesan cheese on a plate. Beat egg and oil in a bowl. Dip chicken in egg, then bread crumbs. Bake at 350° for 30 to 35 minutes, on a cookie sheet or baking pan, until tender and slightly browned. Sprinkle with cheese and bake 5 minutes more to melt the cheese.
