Stuffed zucchini
Ingredients/Components
- egg, beaten - 1 item
- grated Parmesan cheese - 1 item
- Italian sausage - 1 lb
- seasoned bread crumbs - 1/2 c
- medium zucchini squash - 3 item
How to make stuffed zucchini:
Wash zucchini and cut in half lengthwise. Place in boiling salted water and boil until tender. Remove from water and scrape out pulp. Drain well. Remove sausage from casing and fry until no longer pink. Combine pulp, sausage, bread crumbs and beaten egg. Mix gently. Fill squash lengths with mixture and sprinkle with grated Parmesan cheese. Place in a lightly oiled baking pan. Bake at 375° for 20 to 30 minutes.Recipe categories: Squash, Side dish, Vegetables.
