Ingredients/Components

  • grated Parmesan cheese - 1/2 c
  • chopped onion - 1/2 c
  • can tomato paste - 1/2 oz
  • olive oil - 2 Tbsp
  • can whole tomatoes - 4 tomatoes,
  • seasoned bread crumbs - 1/4 c
  • zucchini unpeeled, sliced - 4 item
  • pitted ripe olives, sliced and juice - 1 c

How to make zucchini casserole:

In large saucepan, heat oil; add onions and cook slowly until softened. Add zucchini and tomatoes; cook gently until zucchini is soft. Add tomato paste, olives and juice; turn into a greased 2 quart baking dish. Mix cheese and crumbs; sprinkle on top. Bake at 350° for 20 minutes or until bubbly hot.
