Zucchini casserole
Ingredients/Components
- grated Parmesan cheese - 1/2 c
- chopped onion - 1/2 c
- can tomato paste - 1/2 oz
- olive oil - 2 Tbsp
- can whole tomatoes - 4 tomatoes,
- seasoned bread crumbs - 1/4 c
- zucchini unpeeled, sliced - 4 item
- pitted ripe olives, sliced and juice - 1 c
How to make zucchini casserole:
In large saucepan, heat oil; add onions and cook slowly until softened. Add zucchini and tomatoes; cook gently until zucchini is soft. Add tomato paste, olives and juice; turn into a greased 2 quart baking dish. Mix cheese and crumbs; sprinkle on top.
