Ingredients/Components
- sugar - 2 c
- cinnamon - 1/2 tsp
- eggs - 4 item
- vanilla - 1 tsp
- butter - 1/2 c
- nutmeg - 1/2 tsp
- soda - 1/2 tsp
- grated carrots
- baking powder - 1 tsp
- self-rising flour - 2 c
- hot water
- salad oil - 1 c
- box powdered sugar - 1 item
- Cream oil and sugar
- pecans, slightly floured - 1 c
How to make carrot cake:
Sift flour, soda and baking powder together; sift again with spices. Cream oil and sugar. Add 1 egg at a time; beat well after each. Add 1/2 of the flour; beat. Add 1 1/4 teaspoons water and beat again. Add rest of flour; beat. Add rest of water; mix well. Fold in carrots and nuts. Pour into greased tube pan or loaf pan. Bake at 300° for 1 hour.Icing:1 (8 oz.) pkg. cream cheese, softened1 tsp. vanilla1/2 c. butter1 box powdered sugar Mix all ingredients and spread on cake.Recipe categories: Desserts, Cakes, Carrots.
