- sugar - 2 c
- cinnamon - 1 tsp
- vanilla - 1 tsp
- chopped pecans - 1 c
- pkg - 1 oz
- vanilla extract - 1 tsp
- salt - 1/2 tsp
- flour - 2 c
- soda - 2 tsp
- grated carrots - 3 c
- baking powder - 1 tsp
- vegetable oil
- eggs, well beaten - 4 item
- box powdered sugar
- butter or oleo, softened - 1/2 c
How to make carrot cake:
Cream Cheese Frosting:1 (16 oz.) box powdered sugar1 (8 oz.) pkg. cream cheese, softened1/2 c. butter or oleo, softened1 tsp. vanilla extract1 c. chopped pecans Combine carrots, flour, sugar, soda, baking powder, cinnamon and salt. Stir in eggs, oil and vanilla, mixing well. Spoon batter into 3 greased and floured (9-inch) cake pans. Bake at 350° for 30 minutes, or until cake tests done. Spread Cream Cheese Frosting between layers and on top of cake while still warm.Cream Cheese Frosting: Cream powdered sugar, cream cheese, butter or oleo and vanilla extract until well blended. Stir in pecans. Yields enough frosting for 1 (3-layer) cake.
